Ingredients A

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil, or oil of choice
  • 1 small organic onion, cut into Ā½ inch chunks
  • 2 large organic sweet potatoes, scrubbed and cut into Ā½ inch chunks

Ingredients B

  • 1 tablespoon olive oil, or oil of choice
  • 1 clove organic garlic, minced
  • 1 1/2 teaspoon curry powder
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/8 teaspoon cayenne pepper

Ingredients C

  • 3 cups low sodium organic vegetable broth
  • 1 cup light organic coconut milk

Ingredients D - garnish

  • Vegan yogurt
  • Fresh Italian parsley, chopped
  • Sprouted whole wheat pita bread, cut into eighths

Method:

  1. Preheat oven to 425Ā°F.
  2. Mix Ingredients A in a medium-sized bowl.
  3. Spread the sweet potato and onion chunks onto a baking sheet and roast in the oven for 20-25 minutes. You will want the vegetables cooked until soft.
  4. In a large pot, heat remaining 1 tablespoon of oil over medium heat and add garlic and cook for approximately 1 minute.
  5. Add the remaining ingredients from list B and cook an additional minute.
  6. Mix together the roasted sweet potatoes, onions, and add the vegetable broth from Ingredients C. Bring them to a boil, then reduce the heat to a medium temperature and cook the mixture for an additional 5 minutes.
  7. Remove everything from the heat and carefully puree half of the soup in a high-power blender. Repeat this process with the second half.
  8. Return the pureed soup to the pot and mix in the coconut milk from Ingredients C, cooking for 5 more minutes until the soup is heated all the way through.
  9. Garnish with Parsleys from Ingredients D on top, and serve the vegan sweet potato soup with a dollop of yogurt and pita wedges.
