Acai Oatmeal with Greek Yogurt

Ingredients A:

  • 1 cup rolled oats
  • 400 mL boiling water

Ingredients B:

  • 1 ½ cup organic Greek yogurt
  • 1 cup Medjool dates, chopped
  • 1 tsp vanilla extract
  • 1 tbsp acai berry powder

Ingredients C:

  • 3 servings of your favorite fruits, sliced

Method:

  1. Ingredients A: Pour boiling water on rolled oats in a bowl. Stir until they soften and become thick. Add more water if needed.
  2. Add Ingredients B and to oats.
  3. In serving bowls, spoon in a layer of oatmeal and yogurt mix (Ingredients A & B),  and top with sliced fruit (Ingredients C).
  4. Feel free to add other toppings of your choice, such as cacao nibs, cinnamon or bee pollen.

You can either serve right away or prepare and refrigerate the night before for a nutritious breakfast the next day.
