Black Bean Patties in Avocado Buns

Ingredients A:

  • 1 can organic black beans, drained
  • 2/3 cup whole wheat bread crumbs

Ingredients B:

  • ½ red pepper
  • ½ white onion, chopped
  • 2 garlic cloves, peeled
  • ÂĽ teaspoon garlic powder
  • Salt
  • Pepper

Ingredients C:

  • 1 ripe avocado
  • Lime

Ingredients D:

  • 1 tomato, sliced
  • Salad greens

Method:

  1. Preheat the oven to 350 degrees Fahrenheit. Line a baking tray with parchment paper.
  2. Ingredients A: Pour the black beans into a food processor. Process until it forms a paste.
  3. Transfer the black beans into a bowl and mix in the breadcrumbs.
  4. Ingredients B: Transfer into a food processor and process until well-combined.
  5. Add in the black bean mixture and form patties. Place the patties onto the baking tray and bake for around 10 minutes on each side.
  6. Ingredient C: Slice, core, and peel an avocado in half. Then, slice it in half again crosswise. Squeeze some lime juice into the slices.
  7. Ingredients D: Pile some greens and tomato slices on each slice of avocado before placing a cooked patty on top. Top with another slice of avocado. Serve immediately.
