Yummy Coleslaw with Kefir

Ingredients A

  • 1 cup plain organic kefir
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • Salt
  • Pepper

Ingredients B

  • 4 cups thinly sliced green cabbage
  • 4 cups thinly sliced red cabbage
  • 1 cup shredded carrots
  • ¼ cup chopped fresh parsley

Method

  1. In a small bowl, combine Ingredients A well and set aside.
  2. In a medium bowl, toss Ingredients B together before adding in the dressing. Make you sure you mix everything well together before serving.
