Savory Spinach, Oats, and Eggs Patties

Frozen spinach for spinach pattie

Ingredients:

  • 2 cups frozen spinach, thawed, all the water squeezed out
  • 1 cup oatmeal, *soaked for 1 hour and drained (can use gluten-free oatmeal)
  • 4 organic eggs
  • 1 cup sweet white onion, finely chopped
  • 1 cup shredded raw cheese (may use cottage cheese)
  • ½ tsp crushed red pepper
  • 1 tsp nutritional yeast
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 2 tbsp cold expeller pressed coconut oil for pan-frying.

Directions:

  1. Put oatmeal in water and let soak for 1 hour, drain well.
  2. Thaw spinach. Squeeze the water out using a colander and a clean dish towel.
  3. In a medium-sized bowl, mix all the ingredients together.
  4. Heat a large frying pan over medium heat.
  5. Add coconut oil and melt.
  6. Pour into batter into the pan, cooking until golden brown on the bottom, then flip. Cook for around 4-6 minutes on each side.
  7. Serve as the main dish or as a sandwich filling.
