Ingredients:
- 2 cups frozen spinach, thawed, all the water squeezed out
- 1 cup oatmeal, *soaked for 1 hour and drained (can use gluten-free oatmeal)
- 4 organic eggs
- 1 cup sweet white onion, finely chopped
- 1 cup shredded raw cheese (may use cottage cheese)
- ½ tsp crushed red pepper
- 1 tsp nutritional yeast
- 1 tsp garlic powder
- salt and pepper to taste
- 2 tbsp cold expeller pressed coconut oil for pan-frying.
Directions:
- Put oatmeal in water and let soak for 1 hour, drain well.
- Thaw spinach. Squeeze the water out using a colander and a clean dish towel.
- In a medium-sized bowl, mix all the ingredients together.
- Heat a large frying pan over medium heat.
- Add coconut oil and melt.
- Pour into batter into the pan, cooking until golden brown on the bottom, then flip. Cook for around 4-6 minutes on each side.
- Serve as the main dish or as a sandwich filling.
