Simple Crispy Meatballs

Ingredients A
1 pound lean ground beef
ÂĽ cup uncooked instant brown rice
2 tablespoons whole-wheat breadcrumbs
1 clove garlic, minced
1 large organic egg
Salt
Pepper
Ingredients B
2 teaspoons unrefined coconut oil
½ cup chopped yellow onion
3 cups olive oil
Method
In a large bowl, mix together Ingredients A. Set aside.
In a small pan, heat up the coconut oil and sauté the onions until tender. Remove the pan from the heat and stir the onions into the ingredients A mixture.
Form balls out of the ground beef mixture and set aside.
Heat the olive oil in a pan and fry the meatballs in batches. You can serve this with whole wheat pasta and tomato sauce.
