Ingredients A:

  • 1 red onion, finely sliced
  • 1 fennel bulb, finely sliced
  • 1 tbsp olive oil

Ingredients B:

Ingredients C:

  • 15 oz can butter beans, drained and rinsed
  • 2 tbsp fresh flat-leafed parsley, chopped
  • Salt and pepper to taste

Method:

  1. In a large frying pan, add Ingredients A. Stir-fry over medium heat for 5-10 minutes.
  2. Add Ingredients B and cook for 2 minutes.
  3. Stir in Ingredients C.
  4. Serve
