Orange and Mint Peas

Orange and Mint Peas

Ingredients:

  • 1/2 medium red onion, quartered and thinly sliced
  • 3 tbsp butter
  • 4 cups frozen green peas
  • 1/4 cup freshly squeezed orange juice
  • salt and pepper to taste
  • 2 slices orange zest (only the orange-colored part of the peel), thinly sliced
  • 3 tbsp finely chopped fresh mint

Instructions:

  1. In a medium skillet, heat onion and butter over medium-high heat until onions are translucent, 5-8 minutes.
  2. Add peas, orange juice, and salt and pepper to taste. Stir and cook for around 5 minutes. The peas should be heated through.
  3. Remove from heat and stir in orange peel and mint for garnish.
  4. Serve.
