Healthy Apple Walnut Oatmeal

Oatmeal with Walnut and AppleThis is a great way to add some delicious nutrition to a breakfast staple. One study showed that eating walnuts along with a Mediterranean diet may help protect brain function from declining with age. Walnuts have also been shown to have more antioxidants than other nuts.

Ingredients:

  • 1 cup organic rolled oatmeal
  • ½ cup soaked organic raw walnuts – coarsely chopped
  • ½ organic apple – coarsely chopped
  • 2 tbsp coconut oil
  • 2 cups water
  • raw honey to taste
  • almond milk (optional) – see instruction below to make almond milk

Method:

  1. Put oats, walnuts, apple, coconut oil, and water into a medium pot.
  2. Bring to boil, reduce heat to simmer, and cook for 10-15 minutes.
  3. When ready to eat, add honey and almond milk.

Note:

This recipe can also be eaten cold.

To make almond milk:

In a VitaMix blender or high-powered food processor, place 1 cup soaked organic raw almonds and 2 cups hot water. Blend until smooth; this can take several minutes. Refrigerate.
