Mediterranean Salad Recipe with Pomegranates

A pomegranate fruit, containing powerful benefits of pomegranate for brain health.This delicious and super healthy Mediterranean salad recipe contains pomegranate molasses, which you can make yourself, according to the instructions below, or buy at the store. It’s usually found in Middle Eastern shops, just be aware that most store-bought pomegranate molasses will have added sugar, so try to look for one without.

Pomegranate Molasses Recipe

Ingredients:

  • 100% natural pomegranate juice, no sugar added

Method:

  1. Add the juice to a saucepan.
  2. Bring to a gentle boil on medium heat.
  3. Reduce heat and let the juice boil gently until it takes on a syrupy texture.
  4. Remove from heat and let it cool completely.
  5. Add molasses to a glass container and store it in the fridge.

Salad Dressing

Ingredients:

  • 1 tbsp pomegranate molasses
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 tbsp olive oil

Method:

  1. Whisk the above ingredients together in a bowl.
  2. Season with salt and pepper to taste.

Mediterranean Salad Recipe

Ingredients:

  • 2 large tomatoes, deseeded and chopped into small cubes
  • 2 large cucumbers, deseeded and chopped into small cubes
  • 1 handful of parsley, finely chopped
  • 1 handful of mint, finely chopped
  • 1 handful of dill, finely chopped
  • The seeds of 1 fresh pomegranate

Method:

  1. Combine the tomatoes, cucumbers, parsley, mint, dill, and pomegranate seeds in a large bowl.
  2. Drizzle with the salad dressing.
