This is a great recipe that one of our coaching clients, Karla, sent to us. I loved it so much that I wanted to share it with you guys here on the blog. Hope you enjoy!
Ingredients A:
- 3 medium ripe bananas
- 2 cups old-fashioned rolled oats
- 2 large eggs
- ¼ cup unfiltered honey, or pure maple syrup
- ½ baking power
- ¼ cup brown sugar
- 1 tsp. vanilla
- ¾ cup of chopped dates/or Craisins
- ¾ cup of coconut shredded

Instructions:
- Preheat oven to 350°F. Lightly grease 9x5-inch loaf pan with non-stick cooking spray and set aside or use muffin tins, with liners.
- Place all Ingredients A in your blender and blend until smooth.
- Add Soda in last and then blend a little more.
- Pour into loaf pan or muffin pan.
- Let loaf cool completely in loaf pan. Store bread in an airtight container in the refrigerator. I freeze my muffins and pull them out 30 min’s before use. Add some butter and they are great.
Notes:
- 3 medium bananas is about 1-1/4 cups mashed bananas.
- A loaf pan usually takes right at 35 to 45 minutes, and the muffins take 20-25. It makes 6 big muffins, or one loaf pan.
- Freeze the bread or muffins. They can be used for snacks at any time.
