Healthy Asian Style Meatloaf Recipe

Asian Style Meatloaf Recipe

Ingredients

Glaze

  • 2 tablespoons honey
  • 1/4 cup rice vinegar
  • 1 teaspoon sriracha
  • 3 tablespoons soy sauce, low-sodium or gluten-free

Meatloaf

  • 2 teaspoons olive oil
  • 1/2 cup red pepper, chopped finely
  • ½ cup scallions, chopped finely
  • 5 ounces mushrooms, sliced
  • 1 tablespoon fresh ginger, grated
  • 1 1/2 teaspoons garlic or three medium cloves, minced
  • 1/2 cup water chestnuts, drained and chopped
  • 1 1/2 pounds ground organic turkey breast
  • 1 teaspoon sesame oil
  • 3 tablespoons low-sodium soy sauce
  • 1/4 cup fresh cilantro, chopped

Method

  1. For Glaze: Mix the honey, vinegar, soy sauce, and sriracha in a small saucepan and boil. Reduce the heat and simmer for 2-3 minutes. Take the pan off the heat and set aside.
  2. For Meatloaf: Preheat the oven to 375 degrees F or 190 C. Line a 5 x 10-inch loaf pan with baking paper.
  3. Heat the olive oil in a large pan over medium-high heat. Add scallions and peppers and cook for 1-2 minutes. Add the mushrooms and cook for another 5 to 7 minutes.
  4. When the mushrooms are soft, add the garlic, water chestnuts, and ginger and cook for 1 minute. Take off the heat.
  5. In a large bowl, combine the turkey, cooked vegetables, sesame oil, cilantro, and soy sauce. Transfer the mixture to the loaf pan.
  6. Brush the glaze over the meatloaf and bake for 1 hour and 15 minutes. While cooking, brush more glaze over the loaf once or twice.
  7. Transfer the loaf to a lined baking sheet and bake another 15 minutes or until the thermometer shows 165 F. Let the loaf rest for about 5 minutes before slicing.
  8. Drizzle more glaze over the loaf before serving.
