Healthy Southwest Chicken Recipe

Main Dish - Southwest Chicken Ingredients

  • 1 tbsp liquid hickory smoke
  • 2 tbsp apple cider vinegar
  • 14 1/2 ounces tomato puree
  • 2 lbs boneless skinless chicken thighs
  • 1 ¼ cups onion, chopped
  • 3 cloves of garlic, minced
  • 3 tbsp coconut sugar
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 dried chipotle pepper
  • 1 tbsp chili powder
  • 6 gluten free sandwich rolls, cut in half and toasted
  • 1 ½ avocados, thinly sliced

Side Dish - Cilantro Lime Slaw Ingredients

  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 tsp honey
  • 1 tsp chili powder
  • Pinch of salt
  • 3 cups green cabbage, shredded
  • 1 large carrot, grated
  • ¼ cup cilantro, chopped

Southwest Chicken Recipe Instructions:

A slow cooked Southwest chicken recipe

  1. Place the chipotle pepper into a small amount of boiling water to re-hydrate it for 20 minutes or so. From there, cut the side of the pepper and scrape out the seeds.
  2. Put the chicken into a slow cooker and sprinkle the chopped onion over the top.
  3. Use a blender to combine the vinegar, garlic, tomato puree, liquid smoke, coconut sugar, cumin, chili powder, coriander, and rehydrated chipotle pepper. Blend on a low setting until all of the ingredients create a smooth sauce.
  4. Pour over the chicken and onions in the slow cooker.
  5. Turn the slow cooker on low for 7-8 hours. Then, shred the chicken with a couple of forks.

Cilantro Lime Slaw Instructions:

  1. In a large mixing bowl, whisk the lime juice, olive oil, chili powder, honey, and salt together.
  2. Mix in cabbage, cilantro, and carrot.
  3. Place it in the refrigerator. This tastes the best if it sits for at least 30 minutes in the refrigerator prior to serving to ensure it’s chilled properly. However, the cabbage will lose its crispy texture if it is left to sit for too long.

Serving:

  1. Toast the buns
  2. Serve with chicken on the buns topped with sliced avocado and a spoonful of lime slaw.
