  • 4 green cardamom pods, roughly pounded
  • 2 cloves
  • 2-inch cinnamon
  • 1 can chickpeas, drained and rinsed
  • 1 tbsp ginger paste
  • 1 tsp turmeric powder
  • 1 tbsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp cayenne
  • ½ cup chopped carrots
  • ½ cup chopped beans
  • 1 cup ripe tomatoes, chopped
  • 1 pinch sugar
  • Salt to taste
  • 1 cup nut milk
  • 1 cup tender greens such as baby spinach (optional)
  • ¼ tsp garam masala powder
  • 1 tsp peanut butter
  • Handful of chopped parsley

Method:

  1. In a pan add oil and whole spices: cumin seeds, cardamom, cloves, cinnamon. Allow the spices to brown for about 30 seconds.
  2. Now add chickpeas, ginger, turmeric, cumin powder, coriander powder, and cayenne. Sauté for about two to three minutes to cook the spices and coat the chickpeas.
  3. Add chopped carrots, beans, tomatoes, sugar, and salt to taste. Continue sautéing until tomatoes start to soften.
  4. Now stir in nut milk and bring to a boil. Simmer and cook until gravy thickens. You may add more milk according to your desired consistency.
  5. At this point stir in the tender greens and cook until they wilt.
  6. Lastly stir in garam masala, peanut butter, and parsley, and switch off heat. Allow the curry to stand for about five minutes covered.
  7. Serve curry with steamed rice or cooked grains.
