Colorful Asian Noodle Salad

Ingredients A:

  • 1 pack buckwheat soba noodles

Ingredients B:

  • 1 cup thinly sliced cucumber
  • 1 cup thinly sliced cabbage
  • 1 cup thinly sliced carrots

Ingredients C:

  • ÂĽ cup creamy unsweetened peanut butter
  • 1 tablespoon rice vinegar
  • 2 tablespoons tamari
  • 2 tablespoons sesame oil
  • ½ teaspoon garlic powder
  • 1 ½ tablespoons organic honey

Ingredients D:

  • 1 ½ cups chopped green onions
  • ÂĽ cup chopped peanuts

Method:

  1. Ingredient A: Cook the buckwheat noodles according to package instructions. After they are cooked, rinse the noodles in cold water and set aside.
  2. Mix together Ingredients B in a bowl and set aside.
  3. Combine together Ingredients C in a small bowl and mix well together to form the dressing.
  4. Combine the noodles with the mixed sliced vegetables. Stir in the dressing and make sure everything is coated well.
  5. Top the salad with Ingredients D before serving.
