Chicken Hash Brown Casserole

Hash brown and chicken used in this casseroleQuick and easy to fix recipe for breakfast.

Ingredients:

  • 6 cup Hash Brown – rehydrate as instructed in the box.
  • 4 Free Range Chicken thighs, cubed
  • ½ large sweet onion, chopped
  • Salt and pepper to taste
  • ½ tsp paprika
  • ½ tsp thyme
  • ¼ tsp crushed red chili

Marinade:

  • 1 tsp soy sauce
  • 2 tsp cooking wine
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp olive oil

Directions:

  1. Marinade chicken for ½ hour
  2. Preheat oven to 350F
  3. In a large mixing bowl mix all ingredients.
  4. Pour into a baking dish.
  5. Bake casserole for 30 minutes or until the chicken is done.
