Making Organic Ghee

Ingredients:

  • 2 pounds of good quality, organic butter

Method:

  1. Cut butter into small squares, roughly one inch by one inch.
  2. Cook butter in a saucepan over medium heat. Stir regularly until it starts to foam.
  3. When the liquid is simmering, turn heat to medium-low for 5 minutes with minimum stirring.
  4. As the mixture bubbles, scrape the milk solids away from the sides and bottom of the saucepan continuously so they don’t burn.
  5. When the bubbles turn to foam for the second time, take the pan off the heat and let the foam settle and cool somewhat.
  6. Line a sieve with several layers of cheesecloth and set over a bowl.
  7. Pour the ghee into the sieve. It should be a nice golden color.
  8. Discard the brownish milk solids that remain in the cheesecloth.
  9. Transfer the liquid to a glass jar and let it settle at room temperature for about a full day before using.
