  • 3 four-inch pieces of wakame
  • 2 cups organic sun-dried tomatoes, chopped into small pieces
  • Warm water

Ingredients C:

  • 1 cup fresh basil, chopped
  • 2 red bell peppers, diced

  1. In a medium sized pan, cook Ingredients A by first adding a bit of olive oil and then the mushrooms. Cook briefly and set aside.
  2. Soak Ingredients B in some warm water. Leave them for around 5-10 minutes. Afterwards, drain while retaining some of the water.
  3. In a large bowl pour in the drained chickpeas and add Ingredients A.
  4. Then add Ingredients B and C and gently toss.
  5. Transfer the salad into a container and place in the refrigerator. For maximum flavor, let the chickpea salad chill overnight before eating.

Slow Cooker Chickpea Stew with Lentils

Ingredients A:

  • 4 garlic cloves, peeled and chopped
  • 1 medium-sized yellow onion, diced
  • Ā¼ cup sesame seeds
  • 2 tsp garam masala
  • 2 tbsp coconut oil

Ingredients B:

  • 2 cans organic chickpeas, drained and rinsed
  • Ā¼ cup pitted black olives
  • Ā½ cup dried red lentils
  • 1 can tomato puree
  • 2 cups organic vegetable broth

Method:

  1. Heat the coconut oil in a pan and add Ingredients A. Cook everything until the onions and garlic soften.
  2. Transfer the mixture to a slow cooker and add Ingredients B.
  3. Cook the stew on low for about 8 to 10 hours. Serve immediately afterwards.

Hummus

Ingredients A:
