Inflammation is part of your body’s NeuroEndoMetabolic (NEM) stress response. Its main action is to protect your body against any type of threat. This threat, which we call a stressor, could result from something physical like an illness or injury, exposure to toxins, your work environment, or even the food you eat. So if, for example, you have a gluten sensitivity and eat food high in gluten, you may develop a strong response that includes inflammation.

Eating anti-inflammatory foods may help your body deal with this inflammation. At the same time, decreasing inflammation may also help buffer your body against stress by providing adrenal support.

Your adrenals release higher amounts of cortisol during stressful periods. Cortisol tends to counteract your inflammatory response. But when stress does not abate, your adrenals cannot keep up with the demand for the high-level or increased cortisol production. If your adrenals become fatigued, they produce less cortisol and inflammation becomes systemic, which can lead to a slew of health problems down the line.

Healthy Toppings for Rice Cake Snacks

Rice cake snacks make an easy, nutritious breakfast, lunch, or snack option. This is especially true for those constantly on the go or who need to take something to work that is quick and easy to prepare. Brown rick cake snacks are an even healthier option.

The puffed rice, shaped into a cake form, can be a great gluten-free alternative to bread.

But let us be frank, they tend to be bland and dry.

Lemon and Hummus

Ingredients:

  • 1 brown or white rice cake
  • 2 Tbsp hummus (organic homemade is best, but store-bought is fine)
  • 2 Tsp freshly chopped organic tomatoes
  • Salt to taste
  • 3 chopped basil leaves
  • Lemon juice to taste

Method:

  1. Top the rice cake with hummus and tomatoes, sprinkling with the salt.
  2. Add the chopped basil leaves and lemon juice

Avocado and Kale

Ingredients A:

  • ½ mashed small avocado
  • ½ teaspoon lemon juice
  • Salt to taste
  • Pepper to taste

Ingredients B:

  • ½ cup chopped kale
  • 1 clove of garlic, minced
  • ½ teaspoon olive oil

Ingredients C:

  • 1 brown or white rice cake
  • Chili flakes

Method:

  1. Combine ingredients A in a bowl.
  2. Sauté together ingredients B until the kale wilts.
  3. On the rice cake, add ingredients A and then ingredients B, topping with the chili flakes to taste.

Other Savory Topping Ideas for Rice Cake Snacks

  • Pesto sauce, diced tomatoes, and microgreens
  • Tahini, freshly topped tomatoes, and salt
  • Cheese, cucumber, salt, and pepper
  • Ricotta cheese, smoked salmon, onion, and freshly chopped dill
  • Cottage cheese and freshly chopped chives
  • Cottage or feta cheese with chopped olives

Sweet Rice Cake Snacks

Nut Butter With Fruit

Ingredients:

  • 1 brown or white rice cake
  • 1 Tsp nut butter of choice
  • Sliced banana
  • Berries of choice, sliced if too large

Method:

  1. Spread the nut butter onto the rice cake
  2. Tops with sliced banana and berries

Crunchy Sweet Yogurt

Ingredients:

  • 1 rice cake
  • 2 Tsp thick Greek yogurt
  • 1 teaspoon honey
  • 1 teaspoon pistachio nuts, chopped

Method:

  1. Spread the yogurt onto the rice cake
  2. Top with honey and pistachios
